American sauce is ideal to accompany fish and seafood dishes. It is made from crustaceans, and has a slight spicy flavor. Therefore, it is a strong sauce.

  • 40 g of butter
  • 25 grams of onion and 10 grams of shallots or sweet onion
  • 50 gr of carrots
  • Two spoons of olive oil
  • 60 ml of white wine and 1 tablespoon of cognac
  • 200 gr of tomatoes without skin
  • 200 ml of fish broth
  • 1-2 tablespoons of flour and 1 garlic
  • 150 gr of shells and heads of crustaceans

1. Peel and cut the garlic. Chop the onion, shallot and carrot well.

2. In a saucepan, with 15 g of butter and a tablespoon of olive oil, sauté the garlic, onion, shallot and carrot well with a little salt.

3. Add the wine and stir.

3 Add the peeled and chopped tomatoes. Add a little flour and sauté.

4. Add the shells and shellfish heads.

5. Add the brandy, 25 g of butter and the fish stock, and cook for 20 minutes.

6. Blend everything with the blender, strain it well and let it reduce for 5 or 10 minutes.

7. A little salt ... and voila!
