The theory seems widespread that frying, given the use of oil, is the least indicated option if one wants to look out for health, but, within frying, several modalities can be differentiated, depending on the amount of oil and the cooking time. cooked: deep-frying, grilling or, for example, sautéing. On the other hand, it should be taken into account that the frying oil reaches very high temperatures, so not all oils are good for it. After a certain temperature, undesirable substances begin to be generated, some of them potentially carcinogenic, especially if the oil is reused or overheated.

The most recent studies advocate that olive oil is the most recommended compared to sunflower oil, for example, since it withstands higher temperatures without undergoing transformations in its molecular composition.

However, and oddly enough, sautéing, or deep frying with very little oil while stirring food continuously, is one of the healthiest cooking methods with oilSince few carcinogens are produced, little extra fat is added to the food and a high number of nutrients are retained.

- As far as possible, avoid the use of cooking oils, but above all, avoid reusing and overheating the oils.

- If the oil smokes, it should be discarded, because that smoke means potentially toxic substances are being produced to health.

- When choosing an oil to fry by immersion, it is worth remembering that, although coconut or palm oils are the ones that best withstand cooking temperatures, their saturated fat content is not suitable for health, therefore what olive oil seems the best option.

- In addition, the oil must be at the appropriate temperature throughout the frying and completely cover the food, to quickly form a kind of crust, since, otherwise, the tendency is to absorb even more fat.
